    My guest in the lair today is Nina Greipel, a self-taught kitchen enthusiast with a professional background in photojournalism. Nina and her family owned and operated the Gasthaus German Restaurant until it closed in 2022. She has recently published her cookbook called: Gasthaus Cookbook & Memories.
    In January 2026 Nina was the 1st to be part of the Yes, Chef program. Yes, Chef!, Northeast Regional Library’s paid Chef-in-Residence program, connects the public with chefs, bakers, food creators, culinary artists, or anyone passionate about sharing their love of cooking with the community. Residencies include workshops, demonstrations, and community engagement. She shares what that was like, and, of course, we talk about gluten-free and allergies, as they are a must in the Allergy Dragon's Lair!

    Tessa Grosso, a 21-year-old who underwent OIT ten years ago, and is a community advisor for Latitude Food Allergy Care joins me in the Lair. Tessa shares her journey with food allergies, and how that led her to become an OIT patient. She also shares her experience with OIT , and what her life looks like now.

    Tessa Grosso’s childhood with food allergies was marked by countless visits to the doctor and the ER. When her mom, Kimberley Yates, partnered with Dr. Kari Nadeau to find a solution for Tessa’s severe multiple food allergies, Tessa ultimately became the first person to be treated for multiple food allergies with oral immunotherapy. Today, as a community advocate and an advisor for Latitude, she uses her experience to help create access to care for all food allergy families.

    With more than 20 years of medical experience, Tina L. R. Dominguez is recognized as an expert in food allergy treatment and is adored by her patients. Since 2011, she has devoted her career to food allergy research and care. As one of the founding clinicians of the Sean N. Parker Center for Allergy & Asthma Research at Stanford University, she has actively contributed to the massive progress in food allergy research. As a clinical manager at Stanford, Tina worked closely with patients undergoing oral immunotherapy (OIT), trained allergists on OIT protocols, participated in clinical trial design, and conducted several OIT clinical trials. She continues to work closely with and serve as an advisor to the program at Stanford. In addition, over the last four years, Tina has taken her experience from the research setting to private practice as the Director of an OIT program at an extensive private allergy practice. As a consultant for Aimmune Therapeutics, she has been instrumental in developing training protocols for patient and clinical staff education materials for physicians around the country offering Palforzia — the first FDA-approved OIT treatment — to their patients. Tina has provided care for thousands of food allergy patients of all ages through every step, from diagnosis to treatment.
    As a Bay Area native, Tina attended Stanford School of Medicine Primary Care Associates Program for her Physician Assistant Certification. She also received a Master’s of Medical Science from St. Francis University. She is a member of the American Academy of Allergy, Asthma, and Immunology (AAAAI), the American College of Allergy, Asthma and Immunology (ACAAI), the American Academy of Physician Assistants in Allergy, Asthma & Immunology (APAAAI), and the California Society of Allergy, Asthma, and Immunology (CSAAI).
