Allergies most often occur because some irritant enters the body, and is not completely digested once there. These allergens can get into the blood stream, and then cause any number of allergic reactions throughout the body. When protein is not completely digested, the amino acid "histidine" is decomposed by intestinal bacteria, and changed into the annoying "histamine".
When the body is under stress, it can also break down tissue protein, a.k.a. the auto-immune disease, another process known to produce histamine. This is why some people can actually have allergic reactions to things like the sun, extreme heat, or bitter cold.
