In this episode, Dr. Rohan Shirwaiker joins us to explore the science, engineering, and innovation behind alternative proteins and their potential role in the future of food systems. Together, we discuss the major categories of alternative proteins, how technologies such as plant-based processing, fermentation, and cultivated meat are used to create products with familiar taste and texture, and the sustainability metrics that matter when evaluating these systems. We also examine the scientific and engineering challenges of scaling alternative protein production while maintaining product quality, safety, affordability, and consumer accessibility. From consumer perspectives on naturalness and food processing to opportunities for reducing agricultural waste and strengthening supply chains, we discuss how alternative proteins can complement conventional animal agriculture rather than replace it. The conversation highlights how innovation, transparency, and consumer choice will all play important roles as these emerging technologies continue to evolve alongside existing food production systems.
