The four different dishes I referenced in the episode were sancocho, bandeja paisa, arepas and empanadas. The four beef dishes that Daniel talked about were: posta Cartagena, lomo al trapo, carne asada, carne mechada.

The recipe to make x8 arepas:
x2 cups of cornmeal / maize flour (I recommend the branded Harina PAN white maize flour)
    x1 teaspoon salt
    x1 cup of water
    Enough oil for shallow frying

    1. Mix together the flour and salt, then add the water and form a non-sticky dough.
    2. Roll into 8 separate balls
    3. Press down each ball in the palm of your hand to form a 1/2 inch disc
    4. Heat up oil in a skillet to medium-high temperature
    5. Shallow fry each discfor 3 or-so minutes on each side or until brown
    6. Finish off in the oven for 15 minutes to cook through.
    7. Enjoy with eggs for breakfast or for any time of the day!
