In this episode, our guest is Dr. Donald Schaffner. Dr. Schaffner is Extension Specialist in Food Science and Distinguished Professor at Rutgers University. His research interests include quantitative microbial risk assessment, predictive food microbiology, handwashing and cross-contamination. He has authored more than 150 peer-reviewed publications, and numerous book chapters and abstracts, and has educated thousands of Food Industry professionals through numerous short courses and workshops in the United States and dozens of countries around the world. He is also very active on Twitter (@BugCounter) and hosts his own podcast on microbial food safety at http://foodsafetytalk.com.
Dr. Schaffner talks to us about the risks to be aware of to keep our families safe this summer, and the ways to best reduce our chance of exposure while still engaging in regular summer fun activities.
