    This episode features a panel discussion held at Aporia Coffee Co with Rory van Grol of Ugly Duck Coffee (@uglyduckcoffee) and Angela Liu of Pandamonium Coffee House (@pandamoniumcoffeehouse). They shared their unique approaches to opening a coffee shop in Rochester 10 years ago and 17 months ago.

    Rory credits Joe Bean and The Owl House with supporting his vision in the early years of launching Ugly Duck, which began on Sundays at Scratch Bakeshop, Saturdays at Fiorella, along with weekend popups at Swillburger, Thread, and other private events.

    The Coffee Sensory & Cupping Handbook by @mariofernandezalduenda and @petereodesic is an essential resource for understanding sensory science as it relates to coffee.

    A study based on affective testing found that coffee drinkers’ taste preferences can be correlated not only to flavors discovered in descriptive analysis, but also the the object TDS numbers of each brew.
