      STICKY TOFFEE PUDDING RECIPE

      INGREDIENTS

      Batter

      • 8 ounces of dates
      • 1 cup of boiling water
      • 1/3 cup of butter
      • 2/3 cup of brown sugar
      • 2 teaspoons of vanilla extract
      • 2 eggs
      • 2 Tablespoons of molasses
      • 1 2/3 cups of all-purpose flour
      • 1 1/2 teaspoons of baking powder
      • 1 teaspoon of baking soda
      • ¼ teaspoon of salt

      Toffee Sauce

      • 1/2 cup of heavy whipping cream
      • ½ cup of butter
      • 3/4 cup of brown sugar

      DIRECTIONS

      1. Preheat oven to 350 degrees
      2. Add dates and boiling water to a blender. Leave sitting for 5 minutes.
      3. Cream butter and sugar together. Then add the eggs one at a time and mix until light and fluffy.
      4. Add molasses and mix.
      5. Sift flour, baking powder and salt together. Add to the batter in small amounts.
      6. Blend dates. Once blended, add baking soda and mix.
      7. Pour the date mixture into the batter.
      8. Pour batter into a muffin tin or a square tin. If you are using the muffin tin, bake for 18-20 minutes. If you are using the square tin, bake for 22-25 minutes.
      9. While the batter is baking, add cream, brown sugar, butter and salt into a saucepan.
      10. cook on low for 7-10 minutes until it has thickened.
      11. Once puddings are baked, take them out of the oven and spoon the toffee sauce over top.
      12. Enjoy!

    • The Perfect Grilled Cheese

      This week's culinary adventure is all about "your favourite comfort food". Join my guest and I as we discuss comfortable foods, uncomfortable foods and some shocking new discoveries.

      THE PERFECT GRILLED CHEESE RECIPE

      Ingredients

      • 2 tablespoons of mayo
      • 2 tablespoons of butter
      • 2 slices of thickly sliced bread
      • 1/2 cup of grated cheese

      Directions

      1. Melt 2 tablespoons of butter. Mix melted butter with 2 tablespoons of mayo.
      2. Spread mixture over one side of each slice of bread.
      3. Get a pan and turn the stove on low.
      4. Place one of the slices buttered side down on the pan. Sprinkle 1/2 cup of cheese on to the bread. Place the other slice of bread on top with the buttered side facing up.
      5. Cook for 3-4 minutes or until golden brown.
      6. Flip and cook for another 3-4 minutes.
      7. Enjoy!

      This week we'll be diving into the world of vegetarianism. Me and my guest will be discussing everything from why they became vegetarian to they're favourite meal. Stay tunned until the end of the episode to hear the full recipe!

      RED LENTIL TOFU RECIPE

      Ingredients
      3/4 cup of dried red lentils
      1 1/2 cups of boiling water

      Instructions

      1. Pour 1 1/2 cups of boiling water over 3/4 cups of lentils.
      2. Let that sit for 10-15 minutes until lentils are soft.
      3. Blend lentils and water together until thin and watery.
      4. Pour mixture into a saucepan and cook over medium heat until thick. This should take 5-7 minutes.
      5. Once the mixture has thickened, pour it into a container of your choosing and place it in the fridge for 3-4 hours until it has solidified.
      6. Once it has solidified, slice off pieces to your liking, toss in oil and cook in the oven, air fryer or a pan until crispy.
