The edible parts of vegetables that grow underground are generally called root and tuberous vegetables. Such vegetables are slowly nourished underground as stored food for plants. The role of this type of vegetable in providing energy to the human body is immense.
Potato: The most widely used tuber vegetable in the world is the potato. It is a rich source of sugar or carbohydrates. Potatoes are basically the modified stem of a plant. It contains a lot of starch, which provides our body with quick energy. Potatoes also contain sufficient amounts of potassium and vitamin C.
Sweet Potato: It is a different species than potatoes and is a modified root. Sweet potatoes contain a lot of beta-carotene (which is converted to vitamin A in the body) and fiber. Since it has a low glycemic index, it is quite effective in controlling blood sugar levels compared to regular potatoes.
Carrot: Carrots are a very nutritious type of root vegetable. The main reason for its bright orange color is the high amount of beta-carotene it contains. Carrots are unmatched in increasing eyesight, maintaining good skin, and boosting the body's immunity. It can be eaten both raw and cooked.
Radish: Radish is a root vegetable with a tangy taste. It can be white, red or purple in color. Radish contains sulfur-containing compounds that help in digestion and play a special role in keeping the liver and stomach clean.
Ginger and Turmeric: Although they are modified stems or rhizomes, they are used as both vegetables and spices in the cooking world. They contain powerful anti-oxidants and anti-inflammatory ingredients
