This hearty and fun episode was recorded in February 2025 when Fred took Nico exploring unbelievably close to his home to demonstrate how some amazing Wild ingredients can be found right on our doorsteps.

They needed to find a good haul of Three Cornered Leek (a wildly abundant and invasive Allium) and some Jelly Ear mushrooms for a rather fancy idea Fred had to make a serving of Dim-Sum based around a ‘Turnip Cake’ recipe that Nico hopes tastes nicer than it sounds. How about a little faith Nico? Hmm?
