TIS THE SEASON OUR DEAR FRIENDS!
CHRISTMAS IS JUST AROUND THE CORNER, SO WHAT BETTER WAY TO KICK OFF THE HOLIDAY SEASON THAN HAVING YOU JOIN US AS WE MAKE GRANDMA'S SPICE COOKIES!
AS PROMISED HERE IS THE RECIPE:
INGREDIENTS:1 c shortening
2 large eggs
¼ c hot water
1 tsp ground cinnamon
1 tsp vanilla
1 c brown sugar
1 tsp baking soda
2 c sifted AP flour
½ tsp nutmeg (opt)
1 c chopped pecans if desired
¼4 tsp salt
1 c chopped and drained Maraschino cherries
DIRECTIONS
Preheat oven to 375F.
1- Cream shortening with sugar- can use a stand or hand mixer (medium speed), or cream together with a fork until smooth
2-Add eggs, and mix well. Add Vanilla
3-Dissolve soda in hot water Add to wet mixture.
4- In a separate bowl, Sift flour, cinnamon and nutmeg (if using)
5- Slowly add flour to wet mixture- do a cup at a time until combined-Blend well.
6- By hand, fold in the cut and drained cherries (and nuts if using)7- Chill thoroughly 30 ish minutes or leave to next day.
8- Spoon onto prepped cookie sheets- line cookie sheets with parchment paper
9- Bake 8 to 10 minutes- depending on your oven and cooking sheet, you may need to add an extra 2 minutes.
-Bottom should be cooked and the top should be golden brown.10-Cool on sheet for 5 minutes and then transfer to cooling rack•
YOU CAN ABSOLUTELY DOUBLE OR TRIPLE RECIPE IF NEEDED! WE HOPE YOU ENJOY YOUR LITTLE SWEET TREAT! WE HAD SO MUCH FUN MAKING THEM!
