Summary
Umami explores the science, history, and culture behind the Filipino dishes we know, love, and sometimes take for granted.

Hosted by Rafael Santos, each episode focuses on one dish and digs into the stories behind it—where it came from, how it changed over time, what ingredients make it work, and what it reveals about Filipino identity, migration, family, and tradition.

From adobo and sinigang to regional specialties, street food, merienda favorites, and dishes shaped by centuries of trade and colonization, Umami goes beyond recipes to ask deeper questions.

Why does this dish taste the way it does?
Who first made it?
How did it spread?
And what does its history tell us about the Philippines?

Expect food science, cultural context, culinary history, surprising origins, and the lesser-known stories hidden inside familiar flavors.

One dish per episode.

One deeper story behind every bite.
